Mars Bar Slice

Ingredients

3 x mars bars
3 x cups of rice bubbles
3 x tablespoons of butter / margarine
1 x block of Cadbury Chocolate

Method

1. Ask mum or dad to help cut up the Mars Bars into small pieces, add to a warm saucepan and add butter.
2. Stir the mars bars and butter until they are all mixed in together.
3. Get a bowl to put the rice bubbles in, pour the mars bar and butter mix over the rice bubbles and mix well.
4. Place in a slice tray, place in fridge to set (approx. 1/2 hour).
5. Slowly melt chocolate over warm heat and place on slice when it has cooled down.


Easter Cup Cakes

Ingredients

1 x Packet of butter or vanilla cake mix (Any Brand)
1 x Packet of Mini Easter Eggs or try Caramel Filled ones! But not cheap ones

Method

1. Prepare cake mix per the instructions on the packet
2. Line Patty tin with Patty Papers
3. Half fill the papers with cake mix then place an unwrapped egg in the centre and top with more mix (do not overfill)
4. Cook in moderate oven until they spring back.

Enjoy when still warm or ice and decorate with another egg for a great easter gift.


Apricot Muffins

Ingredients

120grams Raw Sugar
120grams Butter
2 eggs
250mls milk
Juice of 1 orange
250grams chopped dried apricots
1 ½ cups self-raising flour

Method

1. Beat Sugar & Butter; blend with eggs, milk, orange juice and apricots.
2. Fold in flour
3. Spoon mixture into greased muffin pans.
4. Bake at 200°C for 20-25 minutes

Makes Approx. 12 muffins. Great for lunch boxes.


Homemade Chicken Nuggets

Ingredients

500gms chicken mince
1 egg, lightly beaten
¾ cup of breadcrumbs (made from stale bread)
60gms/2oz cottage cheese, mashed
2 tblsp finely chopped parsley
1 cup dried breadcrumbs
Oil for frying

Method

1. Place chicken mince, egg, soft breadcrumbs, cottage cheese and parsley in a bowl and mix well.
2. Take 2 tablespoons of mixture and shape into ball, flatten slightly and coat with dried breadcrumbs. Repeat until all mixture is used.
3. Heat 1cm oil in a frying pan over med. heat until hot, add nuggets and cook for 2 mins each side or until cooked through and golden in colour.
4. Drain on absorbent paper, cool slightly and serve with kidz favourite sauce and vegies.

Makes approx. 24 and freeze well for that quick dinner.


Chocolate Crackles
Cooking Idea
Ingredients

75g plain chocolate
1 teaspoon margarine
1 cup rice bubbles (any brand)
2 tablespoons sultanas or chopped raisins

Method

1. Melt chocolate over hot water in a basin (parent to do)
2. Add margarine
3. Stir in rice bubbles and sultanas until coated with chocolate
4. Spoon mixture into patty papers
5. Leave in fridge or a cool place until set

Great for treats or parties.


Corn Flake Biscuits
Cooking Idea
Ingredients

4oz butter
¾ cup sugar
1cup sultanas
1 egg
1 cup SR Flour
Corn Flakes, you can also used crushed Wheat Biscuits (Weetbix)

Method

1. Preheat oven 180°C
2. Cream Butter & Sugar until smooth
3. Add Egg
4. Stir in sifted flour and sultanas
5. Place the Corn Flakes in bowl
6. Roll teaspoons of mixture in the flakes and coat all over
7. Place on biscuit tray and cook for 10 –15 minutes
8. Cool and eat – great for the lunch boxes


Home-Made Fish Fingers
Cooking Idea
Ingredients

1 med tin Salmon or Tuna
1/2 Cup Grated Carrot
1/2 Cup Grated Zucchini
1/4 Onion Finely Chopped
1/2 Cup Grated Cheese
1/2 cup Breadcrumbs or cold boiled white rice
2 Med potatoes mashed and left to get cold
2 egg yolks

Method
1. Mix all ingredients together and make fingers.
2. Place on a greased oven tray
3. Bake in mod oven for 30-40mins TURN ONCE

Yoghurt Ice Blocks
Cooking Idea
Ingredients

1 cup fruit flavoured yoghurt
1/3 of fruit puree (preferably the same flavour as yoghurt)

Method

1. Place yoghurt and fruit puree in a bowl and mix until combined.
2. Pour into Ice block moulds.
3. Freeze for minimum 5 hours or until solid.

Makes 6.
